Kalamata Tapanade with Roasted Cherry Tomatoes in Fillo Cups
Individual, classy, and delicious appetizers for easy entertaining. You can make the Tapanade ahead or buy ready made. The roasted cherry tomatoes make it elegant.
Ingredients
- Pitted Kalamata Olives - 1 cup
- Fresh Garlic - 2 cloves
- Capers - 1 tbsp
- Chopped Parsley - 2 tbsp
- Olive Oil - 1 tbsp
- Oven Roasted Cherry or Grape Tomatoes - 15-20
- Fillo Factory Mini Fillo Shells - 15 ct
Instructions
1. Pre-bake the fillo cups so they are nice and toasty and crispy- 5 min at 350f
2. Crush and chop garlic – sauté in olive oil until just soft- but not brown.
3. Put all the ingredients (except cups and the roasted tomatoes) into a food processor and process until semi smooth.
4. Fill each cup aprox 1/2 full with a teaspoon of tapenade and top with an oven roasted tomato. Toss a little fresh parsley over them for a garnish and serve immediately.
