Severed Finger Food
Ok they look gross. BUT they taste great. You'll get lots of shrieks and moans! ...and then yums.
Ingredients
- Fillo Dough - 1 lb
- shredded mozzarella - 1 lb
- thick tomato sauce - 2 cups
- fresh grated parmesan - 1/2 cup
- salt, pepper
- crushed garlic(optional) - 1 clove
- extra virgin olive oil - 1/2 cup
- whole pitted kalamata olives - sliced in half lengthwise
Instructions
It's an easy recipe for a busy Halloween/party day. Line up your ingredients for easy access. Small bowls will do with little spoons in each. Get a basting brush for the olive oil and you are set to go.
With the olive oil in a bowl, stir in a 1/2 tsp of salt and some fresh grated pepper (crushed garlic optional)
Start with laying one sheet of fillo on the work surface. (Keep the fillo you are not using under a tea cloth). Brush it with the olive oil mixture, sprinkle with the parmesan cheese and lay another over that one and repeat the basting and sprinkling.
Cut this into three strips across the short side, shown above. Put a small amount of tomato sauce near the bottom. Top with some mozzarella, more parmesan and roll it up. Keep the rolls thin enough to resemble fingers. Repeat until you have as many as you need. You will get three fingers for each pair of sheets you baste. Place the fingers on parchment(baking paper) paper and baste again with the olive oil mixture - placing some shredded mozzarella on each finger to resemble knuckles.
Place a drop of red sauce on the end of each finger and press a 1/2 of an olive onto it to cement in place.
Bake at 375f for about 12-15 minutes. Cool slightly before serving.
Important Tip: the tomato sauce should be thick not watery. If too watery it will absorb into the fingers before they cook and may not be as crispy.
