Brunches are one of my favorite meal gatherings. A great way to start a day, with your friends and family around, breaking fast with each other.  Keeping it simple is important for brunch.

Back in the day, it was always my job to pick up the bagels at Goldberg’s on the way over to our family matriarch’s house.  Bagels and whipped cream cheese.  So be it,  least once a month.  Now,  if you are trying to watch your carb intake, bagels may not be on your accepted list.  So these days I’m making the traditional  lox and cream cheese in these adorable fillo cups for my family. Already baked,  you don’t need to heat them again unless you want them warm and toasty. Fill with a teaspoon of cream cheese and a swirl of lox and it is good to go.  You could get fancy if you want and garnish with 1/2 a cherry tomato on each, and maybe a caper or two.
